This Junmai Ginjo, brewed in accordance with the traditional Kimoto method, has a discrete fragrance which incites thoughts of early spring.  It has been incredibly well blended to acquire its well rounded, creamy soft taste, which is as rich as silk.  Masakura is a refreshing sake with a mild taste which incites feelings of the serenity of a deep forest.

The name Masakura means 'True Cherry Blossom': one of the best known symbols of Japan, which can also be seen in the label's design.

How it should be served

This sake is best drunk slightly chilled at 12-15 ˚C.  It can also be enjoyed slightly heated up.  Its soft and sweet taste makes it a perfect accompaniment to dishes with a creamy soft and sweet profile.

Kimoto: the traditional but very laborious method of producing the yeast starter. This method means no lactic acid bacteria are added from the outside in order to protect the yeast during the preparation phase, but these are naturally acquired by crushing the rice with long sticks.
