Fukuju Daiginjo

A Daiginjo with a light, fruity aroma and a refreshing and elegant taste.  The Yamada Nishiki and other sake rice undergo lengthy polishing until more than 50% of the grain has been removed.  The famous, naturally pure Miyamizu mineral water is used.  A sake which has been produced with care and attention in accordance with the unhurried Ginjo procedure.

Daiginjo is a sake whereby 50% of the rice grain has been polished away, in order to remove unpurified elements like fats and proteins and only be left with the pure starch core.  'Ginjo' means: 'brewed using carefully selected raw materials', 'Dai-Ginjo' means 'Large Ginjo', so extra special!  These premium sakes are brewed in small quantities and with traditional, labour intensive methods.
