Tokutei Meishoshu (quality sake) is a name which only a quarter of all sake can use.  A quality sake satisfies very strict requirements.  When you see Junmai, Tokubetsu Junmai, Honjozo or Tokubetsu Honjozo on the label, then you know you have a quality sake.  When you see Junmai Ginjo, Ginjo, Daiginjo or Junmai Daiginjo, then it’s even about a premium sake.  Another aspect you should pay specific attention to when buying a bottle of sake is the percentage on the label.  This is connected to the percentage of the rice grain which has been left after polishing.  The lower the number, the better.  For example, a 50% sake is better than a 65% sake.
