Types of sake

A summary of a number of types of sake:  

• unfiltered sake (Muroka Sake, Nigori Sake, Ori Sake);
• unpasteurised sake (Hon Nama Sake, Nama Chozo Sake);
• briefly ripened (aged) sake (Shibori Tate Sake and Shinshu Sake);
• extensively ripened (aged) sake (Jukusei Sake, Koshu Sake);
• undiluted sake (Genshu Sake);
• unpasteurised sake (Nama Zume and Hiya Oroshi)

Popular types of sake are: aged (extensively ripened) sake, undiluted sake and unpasteurised sake.  A real hit is the fairly new sparkling sake, which is delicious as an aperitif.  Other options are the tasty wood aged sake and sake with gold leaf.
